Sicilian Cannoli

Ingredients

  • 1 kg of Sarina (a type of flour) 175 g of lard or margarine
  • 50 g of sugar white wine
  • 2 egg yolks
  • 2 small cups of cacao 1 kg of ricotta cheese
  • 800 g of sugar
  • small pieces of chocolate or pistacchio,
  • powdered sugar
  • lemon peel

Place the flour on a work surface, add the lard or margarine, work with your hands until the flour and lard are combined. Add the egg yolks, cacao, wine, sugar, and knead until you obtain a smooth and homogeneous dough. Roll out a thin sheet, cut it into diamond shapes, wrap them around the piece of cane or cannoli molds, and seal the edges with egg white. Fry in abundant oil. When the shells are golden, remove them from the mold and fry them again for about two minutes. Mix the ricotta, season it with sugar and lemon peel, and fill the shells, garnish the sides with chocolat or pistacchio’s bulk. and dust with powdered sugar.
